- In a medium bowl, combine the grated sharp cheddar cheese, shredded havarti or fontina cheese, and grated parmesan cheese. Mix them well until evenly combined.
- Spread about one tablespoon of room-temperature salted butter on one side of each slice of bread.
- On the unbuttered side of two slices of bread, generously sprinkle the everything bagel spice. Then, add a heaping amount of the cheese mixture on top. Top with the remaining slices of bread, ensuring the buttered side is facing out.
- Heat a non-stick skillet over medium heat. Once hot, carefully place the assembled sandwiches into the skillet. Grill for about 3-4 minutes on each side or until the bread is golden brown and the cheese is melted.
- Once the sandwiches are perfectly grilled, remove them from the skillet. Let them cool for a minute before slicing in half. Serve with your favorite dipping sauce or soup.
