Preheat your oven to 350°F (175°C) for even baking.
In a large mixing bowl, combine the natural peanut butter, coconut palm sugar, beaten egg, and vanilla extract. Mix until a smooth dough forms.
Gently fold in the chocolate chips until evenly distributed.
Scoop about a tablespoon of dough onto a lined baking sheet, leaving space between cookies. Flatten slightly.
Sprinkle a little coconut palm sugar on top of each cookie before baking.
Bake for about 10-12 minutes or until edges are lightly golden. Centers may look underbaked.
Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
