  • 1/2 cup coconut palm sugar natural sweetener
  • 2 teaspoons coconut palm sugar for topping
  • 1 large egg acts as a binder
  • 1 teaspoon vanilla extract enhances flavor
  • 2/3 cup chocolate chips dark, semi-sweet, or dairy-free

Method
 

  1. Preheat your oven to 350°F (175°C) for even baking.
  2. In a large mixing bowl, combine the natural peanut butter, coconut palm sugar, beaten egg, and vanilla extract. Mix until a smooth dough forms.
  3. Gently fold in the chocolate chips until evenly distributed.
  4. Scoop about a tablespoon of dough onto a lined baking sheet, leaving space between cookies. Flatten slightly.
  5. Sprinkle a little coconut palm sugar on top of each cookie before baking.
  6. Bake for about 10-12 minutes or until edges are lightly golden. Centers may look underbaked.
  7. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
