Ingredients
  

  • 1 cup creamy unsweetened almond butter
  • 1/2 cup coconut oil or butter
  • 1/2 cup honey or pure maple syrup
  • 6 tablespoons cocoa powder
  • 2 teaspoons pure vanilla extract
  • 2 1/3 cups quick oats
  • 1 pinch sea salt

Method
 

  1. Start by melting the coconut oil (or butter) in a small saucepan over low heat. Once melted, remove it from the heat and let it cool slightly.
  2. In a large mixing bowl, combine the melted coconut oil, almond butter, honey (or maple syrup), and vanilla extract. Mix well until everything is smooth and fully incorporated.
  3. To the wet mixture, add in the cocoa powder, quick oats, and a pinch of sea salt. Stir until all the ingredients are well combined, and the oats are evenly coated.
  4. Using a spoon or cookie scoop, portion out the mixture onto a lined baking sheet or plate. You can shape them into balls or flatten them into cookie shapes, depending on your preference.
  5. Refrigerate the cookies for at least 30 minutes to allow them to firm up. This step is crucial as it helps the cookies hold their shape.
