Ingredients
  

  • 2 tablespoons lightly beaten egg
  • 3 tablespoons agave nectar

  • 2 tablespoons vegetable or canola oil
  • 1 teaspoon vanilla extract
  • 1 cup whole wheat pastry flour
  • 1 tablespoon ground flaxseed (or wheat germ)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon (heaping)
  • 1 cup old fashioned oats
  • 1 cup M&M's or raisins (more if desired)

Method
 

  1. Preheat your oven to 350°F (175°C). This ensures that your cookies will bake evenly and develop that perfect golden color.
  2. In a large mixing bowl, combine the lightly beaten egg, agave nectar, honey, vegetable oil, and vanilla extract. Whisk together until the mixture is smooth and well combined.
  3. In a separate bowl, combine the whole wheat pastry flour, ground flaxseed, baking soda, baking powder, salt, and ground cinnamon. Mix these dry ingredients until they are evenly distributed.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently to combine. Be careful not to overmix; you want your cookies to be soft and chewy.
  5. Fold in the old fashioned oats and M&M's (or raisins), ensuring that they are evenly distributed throughout the cookie dough.
  6. Using a spoon or cookie scoop, portion out the dough onto the prepared baking sheet. Leave space between each cookie, as they will spread while baking.
  7. Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underbaked, but they will firm up as they cool.
  8. Once baked, remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Enjoy these delectable treats warm or at room temperature!
