Ingredients
  

  • 1 pound boneless skinless chicken breasts cut into strips
  • 1 red bell pepper sliced into ½ inch slices
  • 1 yellow bell pepper sliced into ½ inch slices
  • 1 orange bell pepper sliced into ½ inch slices
  • 1 red onion sliced into ½ inch slices
  • 3 tablespoons fajita seasoning blend of chili powder, cumin, paprika, garlic, and oregano
  • 1 tablespoon canola oil for coating chicken and veggies

Method
 

  1. Begin by slicing the chicken breasts into uniform strips—this ensures even cooking. Next, slice each bell pepper and the red onion into ½ inch strips.
  2. Place the chicken strips, bell peppers, and onions in a large mixing bowl. Drizzle the canola oil over everything, then sprinkle the fajita seasoning evenly. Toss thoroughly to coat every piece.
  3. Set your air fryer to 375°F (190°C) and preheat for about 3 minutes.
  4. Transfer the seasoned chicken and vegetables to the air fryer basket in an even layer. Cook for 8 minutes, then toss with tongs or spatula. Continue cooking for another 6-8 minutes until chicken is cooked through and veggies are tender with slightly charred edges.
  5. Remove the fajitas from the air fryer and transfer to a serving platter. Serve immediately with warm tortillas, rice, or your favorite toppings.

Notes

  • Store leftovers in an airtight container in the fridge for up to 3 days.
  • Freeze cooked fajita components separately for up to 2 months.
  • Reheat in the air fryer at 350°F for 3-5 minutes to restore crispness.
