Begin by patting the boneless chicken thighs dry with paper towels. Season both sides of the chicken thighs with salt and pepper.
In a large skillet, heat the vegetable oil over medium-high heat. Once the oil is shimmering, add the chicken thighs.
Carefully place the seasoned chicken thighs in the hot skillet. Sear for about 5-7 minutes on each side, or until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.
In the same skillet, add the diced onion. Sauté for about 3-4 minutes until translucent. Add the minced garlic and cook for an additional minute, stirring frequently to prevent burning.
Pour in the honey and soy sauce, stirring to combine with the sautéed onion and garlic. Allow the sauce to simmer for about 3-5 minutes until it thickens slightly.
Return the seared chicken thighs to the skillet, coating them well with the honey garlic sauce. Cook for another 2-3 minutes, allowing the sauce to adhere to the chicken.
Transfer the glazed chicken thighs to a serving platter. Drizzle any remaining sauce over the top, then garnish with chopped green onions and toasted sesame seeds.
