Ingredients
  

  • 1/4 cup Greek yogurt or sour cream
  • 1/4 cup light ranch dressing bottled or homemade
  • 1 tablespoon fresh cilantro or parsley minced
  • Salt & pepper to taste
  • 4 medium flour tortillas
  • 2 cups cooked chicken chopped or shredded
  • 1 large avocado peeled, pitted, and sliced
  • 1 large tomato sliced
  • 1/4 cup shredded cheddar or mozzarella cheese optional

Method
 

  1. In a mixing bowl, combine the Greek yogurt or sour cream with the light ranch dressing. Stir in the minced cilantro or parsley. Season with salt and pepper to taste. Mix until well combined and set aside.
  2. In the same bowl, add the chopped or shredded cooked chicken to the dressing mixture. Toss until the chicken is fully coated with the creamy ranch dressing.
  3. Warm the flour tortillas slightly in a dry skillet over low heat or in the microwave for about 10 seconds. This will make them more pliable and easier to roll.
  4. Lay a warm tortilla flat on your cutting board. Spoon a generous amount of the chicken mixture onto the center of the tortilla. Top with slices of avocado and tomato. If using, sprinkle some shredded cheese over the top.
  5. Fold in the sides of the tortilla over the filling, then roll it up tightly from the bottom to the top. Repeat this process with the remaining tortillas and filling.
