Ingredients
  

  • 8 ounces cream cheese very well softened (lite is okay)
  • 2 cups mayonnaise lite is okay
  • 3 cups shredded mozzarella cheese divided (or fontina or a favorite easy-melting cheese)
  • 1.5 cups artichokes roughly chopped (I used 6 ounces frozen artichoke hearts from Trader Joe's, chopped; oil-packed artichokes in a jar may be substituted)
  • 1.5 cups frozen spinach thawed and drained
  • 1 teaspoon ground black pepper
  • 0.5 teaspoon cayenne pepper
  • 1 pinch salt optional and to taste

Method
 

  1. Step 1: Preheat the oven to 350°F (175°C) to ensure even baking.
  2. Step 2: In a large mixing bowl, combine the softened cream cheese and mayonnaise. Mix until smooth and creamy.
  3. Step 3: Stir in 2 cups of the shredded mozzarella cheese into the cream cheese mixture. Reserve the remaining cheese for topping later.
  4. Step 4: Gently fold in the thawed spinach and chopped artichokes, ensuring to drain any excess water from the spinach.
  5. Step 5: Add the ground black pepper, cayenne pepper, and a pinch of salt (if desired) to the mixture. Stir until well combined.
  6. Step 6: Spoon the mixture into your prepared baking dish, spreading it evenly. Top with the remaining 1 cup of shredded mozzarella cheese.
  7. Step 7: Bake in the preheated oven for about 25-30 minutes, or until bubbly and golden brown on top.
  8. Step 8: Once baked, remove from the oven and let cool for a few minutes. Serve warm with your favorite dippers.

Notes

  • For a spicier kick, increase the cayenne pepper or add a dash of hot sauce.
  • This dip can be made a day in advance; just assemble and refrigerate, then bake before serving.
  • Stir halfway through baking for even cooking.
