Ingredients

For the Cutlets:
  • 2 pieces boneless, skinless chicken breasts (about 12 ounces each)
  • ½ cup Italian seasoned breadcrumbs (opt for whole wheat for a healthier option)
  • ½ cup Panko breadcrumbs (these add extra crunch)
  • cup freshly grated Parmesan cheese (the fresher, the better for flavor)
  • 1 teaspoon paprika (for a subtle warmth)
  • ½ teaspoon garlic powder (adds depth of flavor)
  • ½ teaspoon ground black pepper (for seasoning)
  • ½ teaspoon cayenne pepper (optional for a spicy kick)
  • 1 large egg (to bind the breadcrumbs to the chicken)
  • Chopped fresh parsley or chives (optional for garnish)

Equipment

  • Meat mallet or rolling pin
  • Baking sheet
  • Bowls
  • Whisk
  • Cooking spray or olive oil

Method

Baking Instructions:
  1. Step 1: Prepare the Chicken - Preheat your oven to 400°F (200°C). Place the chicken breasts between two sheets of plastic wrap or parchment paper. Use a meat mallet or rolling pin to pound the chicken to an even thickness of about ½ inch.
  2. Step 2: Set Up Your Breading Station - In one bowl, whisk the egg until well combined. In another bowl, mix together the breadcrumbs, Parmesan cheese, paprika, garlic powder, black pepper, and cayenne pepper (if using).
  3. Step 3: Bread the Chicken - Dip each chicken breast into the egg mixture, allowing excess to drip off. Transfer to the breadcrumb mixture, pressing down to ensure breadcrumbs adhere.
  4. Step 4: Bake the Cutlets - Place the breaded chicken on a baking sheet lined with parchment paper. Lightly spray or drizzle olive oil over the cutlets. Bake for 20-25 minutes, or until cooked through and golden brown.
  5. Step 5: Serve and Enjoy! - Remove from the oven and let rest for a few minutes. Garnish with parsley or chives if desired and serve with your favorite sides.

Notes

  • Ensure chicken is pounded evenly for consistent cooking.
  • Don’t skip the egg wash to help breadcrumbs stick.
  • Avoid overcrowding the baking sheet for maximum crispiness.
