Ingredients
  

  • 1 whole chicken whole chicken (about 5 pounds) fresh, organic for best flavor
  • 1/4 cup fresh lime juice freshly squeezed
  • 1/4 cup olive oil to keep the chicken moist
  • 1/2 cup fresh cilantro chopped
  • 4 cloves garlic minced
  • 1 teaspoon ground cumin for warm, earthy note
  • 1 teaspoon paprika adds smokiness

Method
 

  1. Preheat your oven to 425°F (220°C) for crispy skin.
  2. In a mixing bowl, combine lime juice, olive oil, cilantro, garlic, cumin, paprika, salt, and pepper. Whisk until blended.
  3. Rinse the chicken, pat dry, and place in a roasting pan. Coat with marinade using a basting brush. Marinate for at least 30 minutes or up to 4 hours.
  4. If desired, truss the chicken with kitchen twine for even cooking.
  5. Roast the chicken for about 1 hour and 15 minutes, until the internal temperature reaches 165°F (74°C).
  6. Let the chicken rest for 10-15 minutes before carving. Serve with lime wedges and extra cilantro.
