Preheat your oven to 425°F (220°C) for crispy skin.
In a mixing bowl, combine lime juice, olive oil, cilantro, garlic, cumin, paprika, salt, and pepper. Whisk until blended.
Rinse the chicken, pat dry, and place in a roasting pan. Coat with marinade using a basting brush. Marinate for at least 30 minutes or up to 4 hours.
If desired, truss the chicken with kitchen twine for even cooking.
Roast the chicken for about 1 hour and 15 minutes, until the internal temperature reaches 165°F (74°C).
Let the chicken rest for 10-15 minutes before carving. Serve with lime wedges and extra cilantro.
