Ingredients
  

For the Meatballs:
  • 1/2 small yellow onion, peeled finely chopped
  • 1 large egg
  • 2 tablespoons plain Greek yogurt light or whole
  • 1/2 cup panko breadcrumbs
  • 1/2 cup freshly grated Parmesan cheese
  • 3 cloves garlic minced
  • 2 tablespoons chopped fresh basil or 1 teaspoon dried
  • 2 tablespoons chopped fresh parsley or 1 teaspoon dried
  • 1 tablespoon chopped fresh rosemary or 1 teaspoon dried, lightly crushed
  • 1/2 teaspoon dried oregano
  • 1 teaspoon granulated beef bouillon or 1 crushed cube (optional)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 pound ground turkey (93% lean)
  • as needed Olive oil for brushing or cooking spray

Method
 

Preparation Steps:
  1. Step 1: Preheat your oven to 400°F (200°C).
  2. Step 2: Finely chop the 1/2 small yellow onion.
  3. Step 3: In a large mixing bowl, combine the chopped onion, egg, Greek yogurt, panko breadcrumbs, grated Parmesan cheese, minced garlic, fresh herbs, dried oregano, beef bouillon (if using), salt, and pepper. Mix everything together until just combined.
  4. Step 4: Gently add the pound of ground turkey to the mixture. Incorporate it without overmixing.
  5. Step 5: Shape the mixture into meatballs, about 1 to 1.5 inches in diameter, and place them on the prepared baking sheet.
  6. Step 6: Lightly brush the meatballs with olive oil or spray them with cooking spray. Bake for 20-25 minutes, until the internal temperature reaches 165°F (74°C).
  7. Step 7: Once baked, let the meatballs cool for a few minutes before serving with your favorite pasta or as a snack.

Notes

  • Store leftovers in an airtight container for up to 3 days.
  • Freeze meatballs in a single layer before transferring to a container for up to 3 months.
  • Reheat in the oven at 350°F (175°C) or microwave until warmed through.
