Ingredients
  

For the Onion Rings:
  • 1 medium onion sliced into 1/4 inch rings
  • 2.25 cups low fat buttermilk
  • 0.5 cup panko bread crumbs
  • 0.25 cup Italian seasoned whole wheat bread crumbs
  • 0.25 cup crushed corn flake crumbs
  • to taste salt
  • olive oil baking spray for coating

Method
 

Cooking Baked Onion Rings:
  1. Prepare the onion by slicing it into 1/4 inch rings and separating the rings gently.
  2. Soak the onion rings in the buttermilk for at least 30 minutes.
  3. Prepare your breading station by combining panko, Italian seasoned breadcrumbs, and corn flake crumbs. Season with salt.
  4. Preheat your oven to 425°F (220°C).
  5. Bread the onion rings by dredging them in the breadcrumb mixture and placing them on a baking sheet.
  6. Spray the tops with olive oil and bake for 20-25 minutes, flipping halfway through.
  7. Once baked, let cool for a few minutes, then serve warm with your favorite dipping sauce.

Notes

  • For extra crunch, make sure not to overcrowd the baking sheet.
  • Soaking the onion in buttermilk is essential for flavor and adhesion of the breading.
