Instructions:
  1. Step 1: Preheat the Oven - Start by preheating your oven to 350°F (175°C). This ensures that your muffins bake evenly and rise beautifully.
  2. Step 2: Prepare Your Muffin Tin - Line your muffin tin with parchment liners or lightly grease it with coconut oil.
  3. Step 3: Combine Dry Ingredients - In a large mixing bowl, whisk together the whole wheat pastry flour, baking soda, cinnamon, and salt.
  4. Step 4: Mix Wet Ingredients - In another bowl, beat the eggs, then add the honey, Greek yogurt, mashed bananas, almond milk, melted coconut oil, and vanilla extract. Stir until smooth.
  5. Step 5: Combine Wet and Dry Ingredients - Gently fold the wet ingredients into the dry ingredients using a spatula.
