Instructions
- Start by peeling the zapotes and removing the pits. Chop them into smaller pieces to make blending easier. You should have about 3 cups of chopped zapote.
- In your blender, combine the chopped zapote, sugar, vanilla extract, and evaporated milk. Blend on high until the mixture is smooth and creamy.
- Once your mixture is smooth, add in the ice. Blend again until the ice is fully incorporated, and the shake is frothy and thick.
- Before serving, taste your Batida de Zapote. You can adjust the sweetness by adding more sugar if desired or even a splash of milk if it’s too thick.
- Pour your Batida de Zapote into tall glasses, and serve immediately. Garnish with a slice of zapote or a sprig of mint for an extra touch of flair!
Notes
- Store leftover shake in an airtight container in the fridge for up to 24 hours.
- For a richer flavor, substitute half of the evaporated milk with coconut cream.
- Add a drizzle of chocolate syrup for a decadent twist!
