- In a large skillet over medium heat, add the ground beef. Cook, breaking it apart with a spatula, until it’s browned and cooked through, about 5-7 minutes. Drain any excess fat if necessary.
- Add the finely chopped onion to the skillet and sauté for about 3 minutes until it becomes translucent. Then, add the minced garlic and cook for an additional minute until fragrant.
- Sprinkle the taco seasoning over the beef mixture and pour in the cup of water. Stir to combine, letting the mixture simmer for 5 minutes or until the sauce thickens slightly.
- Stir in the drained black beans and cooked rice, mixing well to combine all the flavors. Allow the mixture to heat through for another 2-3 minutes.
- Lay a tortilla flat on a clean surface. Spoon a generous amount of the beef mixture onto the center of the tortilla. Top with shredded cheese, salsa, and slices of avocado.
- Fold in the sides of the tortilla and then roll it up tightly from the bottom to the top. Repeat this process for the remaining tortillas and filling.
- Cut the burritos in half if desired, and serve with a dollop of sour cream, a sprinkle of fresh cilantro, and lime wedges on the side for squeezing over the top.
