Ingredients
  

For the Beef Filling:
  • 1 pound ground beef Choose lean beef for a healthier option.
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 ounce taco seasoning Use a packet or make your own for a personal touch.
  • 1 cup water
  • 15 ounces black beans drained and rinsed
  • 1 cup cooked rice
  • 1 cup cheddar cheese shredded, or Monterey Jack cheese
  • 4 large flour tortillas
  • 1 cup salsa or pico de gallo
  • 1 cup sour cream
  • 1 each avocado sliced
  • 1 bunch fresh cilantro chopped, for garnish
  • 1 each lime wedges, for serving

Method
 

Directions:
  1. In a large skillet over medium heat, add the ground beef. Cook, breaking it apart with a spatula, until it’s browned and cooked through, about 5-7 minutes. Drain any excess fat if necessary.
  2. Add the finely chopped onion to the skillet and sauté for about 3 minutes until it becomes translucent. Then, add the minced garlic and cook for an additional minute until fragrant.
  3. Sprinkle the taco seasoning over the beef mixture and pour in the cup of water. Stir to combine, letting the mixture simmer for 5 minutes or until the sauce thickens slightly.
  4. Stir in the drained black beans and cooked rice, mixing well to combine all the flavors. Allow the mixture to heat through for another 2-3 minutes.
  5. Lay a tortilla flat on a clean surface. Spoon a generous amount of the beef mixture onto the center of the tortilla. Top with shredded cheese, salsa, and slices of avocado.
  6. Fold in the sides of the tortilla and then roll it up tightly from the bottom to the top. Repeat this process for the remaining tortillas and filling.
  7. Cut the burritos in half if desired, and serve with a dollop of sour cream, a sprinkle of fresh cilantro, and lime wedges on the side for squeezing over the top.

Notes

  • Prepare the beef filling in advance and store in the refrigerator for up to 3 days.
  • For a healthier option, substitute ground beef with ground turkey or chicken.
