In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant.
Next, add the ground beef to the skillet. Cook it, breaking it apart with your spatula, until it’s browned and cooked through, approximately 5-7 minutes.
Once the beef is cooked, sprinkle in the chili powder, paprika, cumin, dried oregano, and cayenne pepper. Stir well to evenly coat the beef with the spices, allowing the mixture to cook for an additional 2 minutes.
Preheat your oven to 400°F (200°C). On a large baking sheet, spread out the tortilla chips in an even layer.
Then, scoop the seasoned beef mixture generously over the chips, ensuring each chip gets a taste of that flavorful beef.
Sprinkle the diced green bell pepper, red onion, black olives, and jalapeño slices over the beef. Follow this with a generous layer of shredded Monterey Jack and cheddar cheese.
Place the baking sheet in the preheated oven and bake for about 10-15 minutes, or until the cheese is melted and bubbly.
Once out of the oven, remove the nachos from the baking sheet and transfer them to a serving platter or leave them on the sheet for a family-style presentation.
Top with diced Roma tomato and fresh cilantro. Serve with salsa, sour cream, and guacamole on the side for dipping.
