  • 1 cup mixed frozen blueberries or mixed berries
  • 1 small beet peeled and diced (about 8 ounces)
  • 1 cup frozen pineapple
  • ½ cup plain nonfat Greek yogurt (use non-dairy yogurt to make vegan)
  • 1-2 teaspoons honey (or agave to make vegan)
  • 2 tablespoons chia seeds, hemp seeds, or ground flaxseed (optional mix-ins)
  • 2 tablespoons oatmeal (to make the smoothie more filling)

Method
 

Step-by-Step Instructions:
  1. Start by peeling and dicing your small beet into smaller pieces. This will help it blend more easily.
  2. Measure out all your ingredients and have them ready to go. It makes the blending process smoother and faster.
  3. In your blender, combine the diced beet, mixed frozen berries, frozen pineapple, unsweetened almond milk (or milk of choice), and Greek yogurt. If you’re using any optional sweeteners or mix-ins, add them now.
  4. Blend on high speed until all ingredients are completely smooth. If the smoothie is too thick for your liking, feel free to add a splash more milk to reach your desired consistency.
  5. Taste your Beet Smoothie and adjust the sweetness if necessary. You may want to add more honey or agave depending on your preference.
  6. Pour the smoothie into a glass and enjoy immediately. You can also top it with your favorite seeds or a sprinkle of oats for added texture.
