Ingredients
  

  • 1 small golden beet scrubbed and chopped
  • 1 ripe banana peeled and frozen
  • 1 ripe mango peeled and chopped
  • 2 teaspoons fresh turmeric peeled and grated
  • 2 teaspoons ginger peeled and grated
  • 1 zest orange
  • 1.5 cups unsweetened almond milk
  • to taste chopped walnuts for topping
  • to taste chia seeds optional for topping
  • to taste full-fat coconut milk optional, for richer flavor

Method
 

  1. Start by scrubbing the golden beet thoroughly under running water. Chop it into small pieces to facilitate blending. Peel and freeze the banana in advance to ensure a creamy texture when blended. Next, peel and chop the ripe mango, and prepare the fresh turmeric and ginger by peeling and grating them.
  2. In your blender, combine the chopped golden beet, frozen banana, chopped mango, grated turmeric, grated ginger, and orange zest. Add the unsweetened almond milk to the blender.
  3. Blend on high until all ingredients are well combined and the mixture is creamy and smooth. If the smoothie is too thick for your liking, feel free to add a little more almond milk until you reach your desired consistency.
  4. Taste your smoothie and adjust the flavors as needed. If you want more sweetness, you can add a bit of honey or maple syrup, although the banana and mango usually provide enough natural sweetness.
  5. Pour the smoothie into serving glasses. Top with chopped walnuts and a sprinkle of chia seeds for added texture and nutrition. If you want a richer experience, drizzle a bit of full-fat coconut milk on top.
