Ingredients
  

For the Oatmeal:
  • 3 cups old-fashioned rolled oats
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 large eggs slightly beaten
  • 2 1/2 cups unsweetened vanilla almond milk plus additional for serving
  • 1/2 cup pure maple syrup
  • 2 teaspoons pure vanilla extract
  • 3 tablespoons unsalted butter or coconut oil melted
  • 3 cups fresh berries larger berries chopped or sliced (e.g., strawberries, blueberries, raspberries)

Method
 

Cooking Instructions:
  1. Step 1: Preheat your oven to 375°F (190°C).
  2. Step 2: In a large mixing bowl, combine the old-fashioned rolled oats, baking powder, and salt. Stir gently to mix.
  3. Step 3: In another bowl, whisk together the slightly beaten eggs, unsweetened vanilla almond milk, pure maple syrup, pure vanilla extract, and melted unsalted butter or coconut oil until well blended.
  4. Step 4: Pour the wet mixture into the bowl of dry ingredients. Stir until just combined, being careful not to overmix.
  5. Step 5: Gently fold in the fresh berries of your choice.
  6. Step 6: Grease your baking dish and pour the oatmeal mixture into the prepared dish, spreading it out evenly.
  7. Step 7: Place the baking dish in the preheated oven and bake for about 30-35 minutes, until golden brown.
  8. Step 8: Once baked, remove from the oven and let cool for a few minutes. Serve warm.

Notes

  • Assemble the mixture and store it in the refrigerator for up to 24 hours before baking.
  • Leftover baked oatmeal can be stored in an airtight container for up to 5 days.
  • Freeze individual servings for up to 3 months; thaw overnight before reheating.
