Cooking Instructions:
- Step 1: Preheat your oven to 375°F (190°C).
- Step 2: In a large mixing bowl, combine the old-fashioned rolled oats, baking powder, and salt. Stir gently to mix.
- Step 3: In another bowl, whisk together the slightly beaten eggs, unsweetened vanilla almond milk, pure maple syrup, pure vanilla extract, and melted unsalted butter or coconut oil until well blended.
- Step 4: Pour the wet mixture into the bowl of dry ingredients. Stir until just combined, being careful not to overmix.
- Step 5: Gently fold in the fresh berries of your choice.
- Step 6: Grease your baking dish and pour the oatmeal mixture into the prepared dish, spreading it out evenly.
- Step 7: Place the baking dish in the preheated oven and bake for about 30-35 minutes, until golden brown.
