Instructions:
- Preheat your oven to 350°F (175°C). Line a standard cupcake tin with cupcake liners and set aside.
- In a large mixing bowl, whisk together the all-purpose flour, sugar, cocoa powder, baking powder, baking soda, kosher salt, and espresso powder until well combined.
- In another bowl, mix together the milk, oil, egg, and vanilla extract. Whisk until smooth and well combined.
- Pour the wet ingredients into the dry ingredients. Stir until just combined—be careful not to overmix.
- Gradually add the boiling water to the cupcake batter. Mix until just combined.
- Using a measuring cup or a large spoon, fill each cupcake liner about two-thirds full with batter.
- Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
- Once baked, remove from the oven and let the cupcakes cool in the tin for about 5 minutes. Then transfer them to a cooling rack to cool completely.
- Once the cupcakes are completely cool, frost them with your favorite Vanilla Buttercream Frosting or any other frosting you love.
