In a large mixing bowl, mash the black beans using a fork or a potato masher until mostly smooth, leaving some chunks for texture.
Add the beaten egg, seasoned bread crumbs, grated cheddar cheese, smoked paprika, garlic powder, and a generous pinch of kosher salt and pepper to the mashed beans. Mix until all ingredients are well combined.
Divide the mixture into four equal portions and shape them into patties. Make them slightly wider than your buns as they will shrink a bit while cooking.
Heat 1 to 2 tablespoons of avocado oil in a large skillet or griddle over medium heat.
Once the oil is hot, place the patties in the skillet. Using a spatula, smash each patty down to ensure a good sear. Cook for about 4-5 minutes on each side, or until they are golden brown and crispy.
In the last minute of cooking, place a slice of cheddar cheese on each patty and cover the skillet with a lid to melt the cheese.
While the cheese is melting, split the brioche or potato buns and toast them lightly on another skillet or in a toaster.
On the bottom half of each toasted bun, place a slice of tomato, followed by the cheesy black bean patty. Drizzle your favorite house sauce on top, and finish with the top half of the bun.
