  • 1/2 cup old-fashioned rolled oats
  • 2/3 cup whole milk or plant-based milk (like almond or oat milk)
  • 1/3 cup plain Greek yogurt
  • 1 tablespoon honey (or maple syrup for a vegan option)
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon kosher salt
  • Fresh mixed fruit (for garnish, like berries, bananas, or apple slices)
  • Peanut butter or almond butter (for drizzling)

Method
 

  1. In your blender, combine 1/2 cup old-fashioned rolled oats, 2/3 cup milk (dairy or plant-based), 1/3 cup plain Greek yogurt, 1 tablespoon honey, 1/2 teaspoon vanilla extract, and 1/8 teaspoon kosher salt.
  2. Blend the mixture until smooth and creamy. You can adjust the consistency by adding more milk if you prefer a thinner texture.
  3. Pour the blended mixture into a jar or an airtight container.
  4. Seal the container and place it in the refrigerator overnight, or for at least 4-6 hours, allowing the oats to absorb the liquid and soften.
  5. In the morning, give the oats a good stir. Top with fresh mixed fruit and drizzle with peanut butter or almond butter for added flavor and nutrition.
