Ingredients
  

  • 12 large eggs beaten
  • 2 tablespoons cream or half and half or milk
  • 1 teaspoon Spike Seasoning or any all-purpose seasoning that’s good with eggs
  • to taste black pepper fresh ground
  • 3 cups broccoli florets
  • 1/4 cup Swiss cheese grated
  • 1/4 cup mozzarella cheese grated
  • 1/4 cup sharp cheddar cheese grated

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Wash the broccoli florets thoroughly and chop them into bite-sized pieces.
  3. In a large mixing bowl, crack open the 12 eggs and beat them with a fork. Add in the cream, Spike Seasoning, and black pepper to taste, mixing well.
  4. Fold the chopped broccoli florets into the egg mixture gently. Then, add the grated cheeses and stir until evenly coated.
  5. Pour the mixture into a greased 9x13 inch baking dish and spread it out evenly.
  6. Bake for 30-35 minutes, until the eggs are set and the top is golden brown.
  7. Allow to cool for a few minutes before slicing and serving warm.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
  • Freeze portions for up to 2 months for a quick meal later.
  • For added flavor, consider mixing in cooked bacon or sausage.
