For the Brownie Baked Oatmeal:
  • 1/3 cup peanut butter or allergy-friendly substitute (like sunflower seed butter)
  • 3 cups mashed banana (for a banana-free version, use unsweetened applesauce)
  • 1 cup milk of choice or water (dairy or plant-based like almond or oat milk)
  • 1/4 cup pure maple syrup or honey or agave for sweetness
  • 2 teaspoons pure vanilla extract for flavor depth
  • 3 cups rolled oats (gluten-free if needed)
  • 1/2 cup cocoa powder or chocolate protein powder
  • 1 teaspoon salt to enhance all the flavors
  • 1/2 cup chocolate chips (optional, but recommended for extra indulgence)

Equipment

  • Mixing bowls
  • Measuring cups and spoons
  • Fork or potato masher
  • Baking dish
  • Spatula
  • Oven

Method

Instructions:
  1. Step 1: Preheat Your Oven
Preheat your oven to 350°F (175°C) to ensure it’s ready for baking.
  2. Step 2: Mash the Bananas
In a mixing bowl, mash the bananas using a fork or potato masher until they are smooth and creamy.
  3. Step 3: Combine Wet Ingredients
Add the peanut butter, milk, pure maple syrup, and vanilla extract to the mashed bananas. Mix well until all ingredients are fully incorporated.
  4. Step 4: Mix Dry Ingredients
In another bowl, combine the rolled oats, cocoa powder, and salt. Stir until evenly mixed.
  5. Step 5: Combine Wet and Dry Ingredients
Gradually add the dry mixture to the wet mixture, stirring until just combined. If using, fold in the chocolate chips for an extra chocolatey treat.
  6. Step 6: Transfer to Baking Dish
Pour the mixture into a greased baking dish, spreading it evenly.
  7. Step 7: Bake
Bake in the preheated oven for 25-30 minutes or until the top is set and slightly firm to the touch.
  8. Step 8: Cool and Serve
Allow the Brownie Baked Oatmeal to cool for a few minutes before slicing. Serve warm, and enjoy!
