Buckeye Balls (Peanut Butter Balls)

Ingredients
  

  • 1 cup creamy peanut butter Jif is a great choice for its smooth texture
  • 1 stick melted butter equivalent to 1/2 cup
  • 2 cups powdered sugar adjust more as needed for desired sweetness
  • 12 oz. chocolate chips dark or semi-sweet work wonderfully

Equipment

  • Whisk or spatula
  • Baking sheet
  • Parchment paper
  • Microwave-safe bowl
  • Fork or toothpicks

Method
 

  1. In a mixing bowl, combine 1 cup of creamy peanut butter and 1 stick of melted butter. Stir together until well combined and smooth.
  2. Gradually add 2 cups of powdered sugar to the peanut butter mixture. Mix until the ingredients come together to form a thick, moldable dough.
  3. Using your hands, scoop out portions of the mixture and roll them into balls about 1 inch in diameter. Place them on a baking sheet lined with parchment paper.
  4. While the peanut butter balls are chilling, melt the 12 oz. of chocolate chips in a microwave-safe bowl. Heat in 30-second intervals, stirring in between, until smooth and fully melted.
  5. Once the peanut butter balls are firm, use a fork or toothpick to dip each ball into the melted chocolate, making sure to coat them evenly. Allow any excess chocolate to drip off before placing them back on the parchment-lined baking sheet.
  6. After all the balls are dipped in chocolate, refrigerate them again for about 30 minutes or until the chocolate hardens.

Notes

  • Store in an airtight container in the refrigerator for up to 2 weeks.
  • For longer storage, freeze before dipping in chocolate.
  • Use flavored peanut butter for a unique twist!
