Cafe Rios Cilantro Lime Rice

Ingredients
  

  • 2 tablespoons butter
  • 1 cup uncooked white rice
  • 2 cups chicken broth
  • 1 large or 2 small limes Juice and zest
  • 2 tablespoons finely chopped cilantro
  • 2 teaspoons salt
  • 1 teaspoon cumin
  • to taste pepper

Equipment

  • Medium saucepan
  • Measuring cups and spoons
  • Wooden spoon
  • Zester or grater
  • Citrus Juicer

Method
 

  1. Gather all your ingredients: rice, butter, chicken broth, lime juice, lime zest, cilantro, salt, cumin, and pepper.
  2. Melt the butter in a medium saucepan over medium heat. Add the uncooked white rice and stir for about 2-3 minutes until slightly translucent and fragrant.
  3. Pour in the chicken broth, lime juice, lime zest, salt, and cumin. Stir and bring to a gentle boil.
  4. Once boiling, reduce heat to low, cover, and let simmer for about 18-20 minutes without lifting the lid.
  5. After cooking, remove from heat and let sit for 5 minutes. Fluff with a fork and stir in the finely chopped cilantro and additional pepper to taste.
  6. Serve your Cafe Rios Cilantro Lime Rice with your favorite proteins, tacos, or grilled vegetables.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • Freeze in a freezer-safe container for up to 3 months.
  • Reheat with a splash of water to prevent drying out.
