Ingredients
  

For the Sandwich:
  • 3 pieces Andouille sausages sliced
  • 5 tablespoons Butter softened
  • 6 ounces Extra-sharp cheddar cheese shredded
  • 8 slices Italian or French bread
  • 4 teaspoons Dijon mustard
  • 6 ounces Monterey Jack cheese shredded

  1. Step 1: Prepare the Sausage - Start by removing the casing from the andouille sausages. Slice them into bite-sized pieces.
  2. Step 2: Cook the Sausage - In a skillet over medium heat, add the sliced sausage. Cook until browned and heated through, about 5-7 minutes. Remove from skillet and set aside.
  3. Step 3: Butter the Bread - Spread the softened butter generously on one side of each slice of bread.
  4. Step 4: Assemble the Sandwiches - On the unbuttered side of four slices, spread 1 teaspoon of Dijon mustard, layer with cheese and sausage, then top with another slice of bread, buttered side up.
  5. Step 5: Grill the Sandwiches - Place sandwiches in skillet over medium heat. Cook until golden brown, about 3-4 minutes per side.
  6. Step 6: Serve and Enjoy - Remove sandwiches from skillet, let cool slightly, cut in half, and serve warm.

Notes

  • For a lower-carb version, substitute with Portobello mushrooms or zucchini slices.
  • This sandwich pairs well with tomato soup or a light salad.
