Carrot Tarator /Havu Tarator

Ingredients
  

  • 3 medium carrots peeled and grated
  • 1 clove garlic minced
  • 4 tbsp olive oil
  • 5 tbsp yogurt
  • Salt to taste

Method
 

  1. Begin by peeling the 3 medium carrots. Once peeled, grate them using a grater or food processor.
  2. Take 1 clove of garlic and either use a garlic press or finely chop it with a knife.
  3. In a dry skillet over medium heat, toast the 3 walnuts for a few minutes until fragrant. Once toasted, chop them coarsely.
  4. In a mixing bowl, combine the grated carrots, minced garlic, toasted walnuts, and 4 tablespoons of olive oil. Stir well.
  5. Add 5 tablespoons of yogurt to the mixture. Stir everything together until well blended. Season with salt to taste.
  6. Refrigerate the Carrot Tarator for at least 30 minutes before serving.

Notes

  • Use thick, creamy yogurt for the best results.
  • Leftover Carrot Tarator can be used as a filling for wraps.
  • Toasting walnuts enhances their flavor and crunch.
