Begin by peeling the 3 medium carrots. Once peeled, grate them using a grater or food processor.
Take 1 clove of garlic and either use a garlic press or finely chop it with a knife.
In a dry skillet over medium heat, toast the 3 walnuts for a few minutes until fragrant. Once toasted, chop them coarsely.
In a mixing bowl, combine the grated carrots, minced garlic, toasted walnuts, and 4 tablespoons of olive oil. Stir well.
Add 5 tablespoons of yogurt to the mixture. Stir everything together until well blended. Season with salt to taste.
Refrigerate the Carrot Tarator for at least 30 minutes before serving.
