  • 0.5 teaspoon baking powder
  • 0.25 teaspoon freshly grated nutmeg
  • 0.5 teaspoon salt
  • 16 tablespoons unsalted butter softened but still cool
  • 1 cup packed light brown sugar
  • 1 cup granulated sugar
  • 2 large eggs
  • 3 cups old-fashioned rolled oats
  • 1.5 cups raisins

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Line two baking sheets with parchment paper.
  3. In a medium bowl, whisk together the flour, baking powder, nutmeg, and salt. Set aside.
  4. In a large mixing bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy (2-3 minutes).
  5. Add the eggs one at a time, mixing well after each addition.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Fold in the oats and raisins until evenly distributed.
  8. Drop rounded balls of dough onto prepared baking sheets, spacing them about 2 inches apart.
  9. Bake for 10-12 minutes, or until the edges are lightly golden.
  10. Cool on the baking sheets for about 5 minutes before transferring to a cooling rack.
