Begin by washing your fresh berries or thawing your frozen fruit. If using whole fruits, chop them into smaller pieces.
In a medium saucepan, combine the prepared fruit with the lemon juice. Cook over medium heat, stirring occasionally, until the fruit begins to break down, about 5-10 minutes.
Once the fruit is cooked, remove from heat. Stir in the chia seeds and let sit for about 5 minutes.
After thickening, taste and adjust sweetness with honey, maple syrup, or agave if desired.
Allow to cool to room temperature before transferring to a jar or airtight container. Store in the refrigerator for up to two weeks.
