Chicken Alfredo Tortellini Bake with Garlic Crumbs

Ingredients
  

  • 2 cups uncooked cheese tortellini
  • 2 cups cooked and shredded chicken
  • 2 cups Alfredo sauce
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup turkey bacon, cooked and crumbled
  • 1/2 cup breadcrumbs
  • 2 tablespoons olive oil used to toast the breadcrumbs and garlic
  • 3 cloves garlic minced
  • 1/2 teaspoon Italian seasoning
  • salt and pepper to taste
  • Fresh parsley for garnish

Method
 

  1. Bring a large pot of salted water to a boil. Add the cheese tortellini and cook according to package instructions until al dente, usually about 3-5 minutes. Drain well and set aside.
  2. In a skillet over medium heat, warm the olive oil. Add the minced garlic and sauté for 1-2 minutes until fragrant but not browned. Stir in the breadcrumbs and Italian seasoning, cooking for another 3-4 minutes until the crumbs are golden and crisp. Remove from heat and set aside.
  3. In the same or a separate skillet, cook the turkey bacon until crisp. Once cooled, crumble it into small pieces.
  4. In a large mixing bowl, combine the cooked tortellini, shredded chicken, Alfredo sauce, half of the Parmesan cheese, and half of the mozzarella cheese. Season with salt and pepper to taste. Gently toss everything together until evenly coated.
  5. Preheat your oven to 375°F (190°C). Spread the tortellini mixture evenly into your baking dish. Sprinkle the turkey bacon over the top, followed by the remaining Parmesan and mozzarella cheese. Finally, sprinkle the garlic crumb mixture evenly over everything.
  6. Place the baking dish in the oven and bake for 20-25 minutes until the cheese is melted and bubbly, and the garlic crumbs are golden brown.
  7. Remove the bake from the oven and let it cool for a few minutes. Garnish with freshly chopped parsley before serving.

Notes

  • Don’t overcook the tortellini during boiling; they will continue to cook slightly in the oven.
  • Be careful not to burn the garlic when making the crumb topping to avoid bitterness.
  • Store leftovers in an airtight container in the fridge for up to 3 days and reheat covered at 350°F for 15-20 minutes.
