Ingredients
  

  • 1 lb ground chicken
  • 1 cup panko bread crumbs
  • 1/2 cup milk
  • 2 tablespoons sour cream
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 large egg
  • 1 small onion, grated
  • 1/2 cup flour for dredging
  • to taste olive oil or canola oil for sautéing

Method
 

  1. In a large mixing bowl, combine the ground chicken, panko breadcrumbs, milk, sour cream, salt, pepper, egg, and grated onion. Mix everything together using your hands or a spatula until just combined. Be careful not to overmix, as this can make the patties tough.
  2. With your hands, form the mixture into small patties, about 2-3 inches in diameter. You should get around 8-10 patties, depending on the size you choose. Once shaped, lightly dust each patty with flour on both sides to help achieve that golden crust during frying.
  3. In a large skillet, heat a couple of tablespoons of olive oil or canola oil over medium heat. You want enough oil to coat the bottom of the pan, ensuring even cooking.
  4. Once the oil is hot, carefully add the patties to the skillet. Make sure not to overcrowd the pan; you may need to cook them in batches. Fry the kotleti for about 4-5 minutes on each side, or until they are golden brown and cooked through. You can check for doneness by cutting one open to ensure no pink remains in the center.
  5. Once cooked, transfer the kotleti to a paper towel-lined plate to absorb any excess oil. This will keep them crispy. Serve warm with your favorite dipping sauce, a side salad, or tucked into a pita for a delightful meal!

Notes

  • Store leftovers in an airtight container in the refrigerator for up to three days.
  • You can freeze uncooked patties; just freeze in a single layer and transfer to a freezer bag.
  • Add grated zucchini or carrots for extra veggies.
