  • 2 cups water
  • 1 cup basmati rice
  • 1 bay leaf
  • 1 tablespoon olive oil
  • 1 pinch sea salt
  • 1 sprig fresh cilantro (chopped)
  • 1 tablespoon fresh lime juice
  • 1 tablespoon fresh lemon juice

Method
 

Directions:
  1. Start by rinsing the basmati rice under cold water until the water runs clear, then drain well.
  2. In a medium saucepan, combine the rinsed rice, 2 cups of water, the bay leaf, olive oil, and a pinch of sea salt. Stir gently to combine.
  3. Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 18-20 minutes, or until the water is absorbed and the rice is tender.
  4. Once cooked, remove the saucepan from heat and let it sit, covered, for an additional 5 minutes. After five minutes, remove the lid, discard the bay leaf, and fluff the rice with a fork.
  5. Stir in the chopped cilantro, fresh lime juice, and fresh lemon juice. Mix well to ensure every grain of rice is coated.
  6. Serve your Chipotle Cilantro-Lime Rice warm as a side dish or as a base for your favorite burrito bowls. Enjoy!

Notes

  • Rinse the rice to prevent a gummy texture.
  • Store leftovers in an airtight container in the fridge for up to four days.
  • For spice, consider adding diced jalapeƱos during cooking.
