- Start by rinsing the basmati rice under cold water until the water runs clear, then drain well.
- In a medium saucepan, combine the rinsed rice, 2 cups of water, the bay leaf, olive oil, and a pinch of sea salt. Stir gently to combine.
- Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 18-20 minutes, or until the water is absorbed and the rice is tender.
- Once cooked, remove the saucepan from heat and let it sit, covered, for an additional 5 minutes. After five minutes, remove the lid, discard the bay leaf, and fluff the rice with a fork.
- Stir in the chopped cilantro, fresh lime juice, and fresh lemon juice. Mix well to ensure every grain of rice is coated.
- Serve your Chipotle Cilantro-Lime Rice warm as a side dish or as a base for your favorite burrito bowls. Enjoy!
