Ingredients
  

  • 2.5 cups old-fashioned oats (certified gluten-free, if needed)
  • 0.5 cup almonds (chopped)
  • 0.5 cup walnuts (chopped)
  • 0.33 cup cocoa powder
  • 1 tablespoon chia seeds
  • 0.25 teaspoon kosher salt
  • 0.5 cup date sugar or coconut sugar or light brown sugar
  • 0.33 cup maple syrup
  • 0.25 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 3.5 oz dark chocolate (chopped into chunks or ½ cup semisweet chocolate chips)

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the old-fashioned oats, chopped almonds, chopped walnuts, cocoa powder, chia seeds, kosher salt, and your choice of sugar. Stir well to combine.
  3. In a separate bowl, whisk together the maple syrup, melted coconut oil, and vanilla extract until well combined.
  4. Pour the wet ingredients into the bowl of dry ingredients. Use a spatula or wooden spoon to mix everything together until evenly coated.
  5. Line a baking sheet with parchment paper and spread the granola mixture evenly across the sheet, pressing down gently.
  6. Bake for 25-30 minutes, stirring halfway through. Keep an eye on it during the last few minutes.
  7. Once golden brown and fragrant, remove from the oven and stir in the chopped chocolate or chocolate chips while still warm.
  8. Let the granola cool completely on the baking sheet, then break into clusters and store in an airtight container.

Notes

  • Store in an airtight container at room temperature for up to 2 weeks.
  • Granola can be frozen for up to three months.
  • For a nut-free option, substitute nuts with seeds.
