In a mixing bowl, combine 1 cup of creamy peanut butter and 1 cup of marshmallow crème. Use a spatula to mix until the mixture is smooth and well combined.
Take a Ritz cracker and spread a generous amount of the peanut butter and marshmallow mixture on top. Place another cracker on top to create a sandwich. Repeat this process until all the filling is used, making sure to create stacks of crackers with the filling in between.
Using a double boiler or microwave, melt your coarsely chopped chocolate until it is completely smooth. If using a microwave, heat in 30-second intervals, stirring in between to avoid burning.
Once the chocolate is melted, take each stack and dip it into the chocolate, ensuring it’s fully coated. Use a fork to lift it out, allowing any excess chocolate to drip off.
Place the chocolate-covered stacks on a baking sheet lined with wax paper or parchment paper. If desired, sprinkle holiday sprinkles on top before the chocolate sets.
Refrigerate the stacks for about 30 minutes or until the chocolate is firm and set.
