- Preheat your oven to 350°F (175°C).
- Line your baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, cocoa powder, baking soda, cream of tartar, cinnamon, and sea salt. Set aside.
- In a large mixing bowl, beat the butter, brown sugar, and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- In a small bowl, mix together the granulated sugar and ground cinnamon for the coating.
- Using a cookie scoop, scoop out the dough and roll into balls. Roll each ball in the cinnamon-sugar mixture.
- Place the coated dough balls on the prepared baking sheet and bake for 10-12 minutes.
- Let the cookies cool on the baking sheet for 5 minutes before transferring to a cooling rack.
