For the Serving:
  • 1/3 cup spiced black beans for hearty flavor
  • to taste cilantro for garnish
  • to taste avocado for creaminess
  • to taste salsa/hot sauce for added flavor

Method
 

Preparation Steps:
  1. In a mixing bowl, crack the eggs and add milk and salt. Whisk until smooth and frothy.
  2. Heat the non-stick skillet over medium heat and melt the butter, coating the pan.
  3. Pour in the egg mixture and let it sit until it starts to set, then gently scramble with a spatula.
  4. Add cilantro and cheese when eggs are nearly done, folding until combined.
  5. Heat black beans in a small saucepan over low heat until warmed through.
  6. Serve by placing spiced black beans on a plate, topping with the cilantro scramble, and garnishing with cilantro, avocado, and salsa.
