  • 1 tablespoon Sugar
  • 1 1/2 teaspoons Baking powder

  • 2 cups Buttermilk
  • 2 large Eggs
  • 4 tablespoons Butter melted
  • 1 teaspoon Vanilla extract
  • 1 cup Sweetened coconut flakes divided
  • 1 tablespoon Lime zest
  • 2 tablespoons Lime juice

Method
 

Instructions:
  1. Step 1: Preheat your waffle maker according to the manufacturer's instructions. If required, lightly coat it with non-stick spray or melted butter.
  2. Step 2: In a large mixing bowl, whisk together the all-purpose flour, kosher salt, sugar, baking powder, and baking soda.
  3. Step 3: In another bowl, combine the buttermilk, eggs, melted butter, vanilla extract, lime juice, and lime zest. Whisk until smooth.
  4. Step 4: Pour the wet mixture into the dry ingredients. Gently stir until just combined. A few lumps are fine.
  5. Step 5: Fold in 3/4 cup of sweetened coconut flakes gently with a spatula.
  6. Step 6: Ladle the batter into the preheated waffle maker (about 1/2 cup). Cook according to the manufacturer's instructions until golden brown.
  7. Step 7: Carefully remove the waffles and place them on a plate. Sprinkle with the remaining coconut flakes and serve warm with toppings of choice.
