Instructions:
- Step 1: Preheat your waffle maker according to the manufacturer's instructions. If required, lightly coat it with non-stick spray or melted butter.
- Step 2: In a large mixing bowl, whisk together the all-purpose flour, kosher salt, sugar, baking powder, and baking soda.
- Step 3: In another bowl, combine the buttermilk, eggs, melted butter, vanilla extract, lime juice, and lime zest. Whisk until smooth.
- Step 4: Pour the wet mixture into the dry ingredients. Gently stir until just combined. A few lumps are fine.
- Step 5: Fold in 3/4 cup of sweetened coconut flakes gently with a spatula.
- Step 6: Ladle the batter into the preheated waffle maker (about 1/2 cup). Cook according to the manufacturer's instructions until golden brown.
- Step 7: Carefully remove the waffles and place them on a plate. Sprinkle with the remaining coconut flakes and serve warm with toppings of choice.
Notes
- For a healthier option, consider using whole wheat flour instead of all-purpose flour.
- Store leftovers in an airtight container in the fridge for up to 3 days.
- Waffles can be frozen for up to 2 months; reheat in a toaster for best results.
