Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the softened butter, brown sugar, and white sugar. Beat until light and fluffy.
  3. Add the whipped cottage cheese and mix until fully combined.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually add to the wet mixture, mixing until just combined.
  5. Fold in the chocolate chips evenly into the dough.
  6. Drop rounded balls of dough onto a parchment-lined baking sheet, leaving space for spreading. Bake for 10-12 minutes until edges are golden.
  7. Let the cookies cool on the baking sheet for a few minutes before transferring them to a cooling rack.

Notes

  • For softer cookies, do not overmix the dough.
  • Chilling the dough for 30 minutes helps prevent excessive spreading.
  • Store cookies in an airtight container for up to a week.
