Ingredients
  

  • 8-10 large eggs
  • 1 cup cottage cheese
  • 1/2 tsp fine sea salt or added to taste
  • 1/4 tsp freshly ground black pepper or to taste
  • 1/2 cup shredded cheese (such as medium cheddar or mozzarella)
  • 1/2-1 cup optional add-ins (see notes below)

  • Mixing bowl
  • Whisk or fork
  • Measuring cups and spoons
  • Cooking spray or oil

Method
 

  1. Start by preheating your oven to 350°F (175°C).
  2. Spray your muffin tin generously with cooking spray or lightly grease it with oil.
  3. In a mixing bowl, crack open 8-10 large eggs and beat until well combined.
  4. Add 1 cup of cottage cheese, 1/2 teaspoon of fine sea salt, and 1/4 teaspoon of freshly ground black pepper to the beaten eggs. Mix until combined.
  5. Fold in 1/2 cup of shredded cheese.
  6. Fold in any optional add-ins of your choice.
  7. Pour the egg mixture into each muffin cup, filling them about 2/3 full.
  8. Bake for 20-25 minutes, or until set and slightly golden on top.
  9. Let the egg bites cool for a few minutes before removing them from the tin.

Notes

  • Store in an airtight container in the refrigerator for up to 5 days.
  • Reheat in the microwave for 30-60 seconds or in the oven at 350°F for 10 minutes.
  • These egg bites freeze well for up to 2 months; reheat directly from frozen.
