Start by preheating your oven to 350°F (175°C).
Spray your muffin tin generously with cooking spray or lightly grease it with oil.
In a mixing bowl, crack open 8-10 large eggs and beat until well combined.
Add 1 cup of cottage cheese, 1/2 teaspoon of fine sea salt, and 1/4 teaspoon of freshly ground black pepper to the beaten eggs. Mix until combined.
Fold in 1/2 cup of shredded cheese.
Fold in any optional add-ins of your choice.
Pour the egg mixture into each muffin cup, filling them about 2/3 full.
Bake for 20-25 minutes, or until set and slightly golden on top.
Let the egg bites cool for a few minutes before removing them from the tin.
