  • 1/4 cup cucumber sliced
  • 1/3 cup full-fat cottage cheese the star of the sandwich
  • Salt and pepper to taste

Preparation Steps
  1. Start by gathering all your ingredients. Slice the cucumber and Roma tomato, and if you’re using avocado, either mash it or slice it as well.
  2. In a skillet over medium heat, add the tablespoon of butter. Once melted, place the slices of bread in the skillet. Toast each side until golden brown, about 2-3 minutes per side.
  3. Once the bread is toasted, remove it from the skillet. On one slice of bread, spread the cottage cheese evenly. Top with the sliced cucumbers, Roma tomato, and avocado. Sprinkle a pinch of salt and pepper over the veggies for added flavor.
  4. Place the second slice of bread on top of the veggies, cottage cheese side down. Gently press down to help everything adhere together.
  5. If you want an extra crispy finish, return the assembled sandwich to the skillet for a minute on each side.
  6. Once your sandwich is assembled and toasted to your liking, slice it in half and serve immediately.
