Preparation Steps
- Start by gathering all your ingredients. Slice the cucumber and Roma tomato, and if you’re using avocado, either mash it or slice it as well.
- In a skillet over medium heat, add the tablespoon of butter. Once melted, place the slices of bread in the skillet. Toast each side until golden brown, about 2-3 minutes per side.
- Once the bread is toasted, remove it from the skillet. On one slice of bread, spread the cottage cheese evenly. Top with the sliced cucumbers, Roma tomato, and avocado. Sprinkle a pinch of salt and pepper over the veggies for added flavor.
- Place the second slice of bread on top of the veggies, cottage cheese side down. Gently press down to help everything adhere together.
- If you want an extra crispy finish, return the assembled sandwich to the skillet for a minute on each side.
