Ingredients
  

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • ½ cup unsalted butter cold
  • 4 ounces cream cheese cold
  • 1 cup buttermilk cold
  • melted butter for brushing

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. Prepare a baking sheet by lining it with parchment paper or greasing it lightly.
  3. In a large mixing bowl, whisk together the flour, baking powder, and salt until well combined.
  4. Cut in the cold unsalted butter and cold cream cheese into the flour mixture until crumbly.
  5. Make a well in the center and pour in the cold buttermilk; stir gently until just combined.
  6. Turn the dough onto a floured surface and pat into a rectangle about 1 inch thick.
  7. Cut the dough into desired shapes and place them on the prepared baking sheet.
  8. Brush the tops with melted butter before baking.
  9. Bake for 12-15 minutes until puffed and golden brown.
  10. Let cool for a few minutes before transferring to a wire rack. Serve warm.

Notes

  • For a gluten-free option, substitute the all-purpose flour with a gluten-free blend.
  • To make it vegan, use plant-based butter and cream cheese, and a non-dairy milk mixed with vinegar instead of buttermilk.
  • You can freeze the dough in advance and bake from frozen, adding extra time to the baking.
