Ingredients
  

  • 2 cups Greek yogurt low-fat, plain
  • 2 tablespoons lemon juice
  • 1/2 cup parsley leaves loosely packed
  • 2 cloves garlic
  • 1/2 teaspoon paprika
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 3/4 cup scallions chopped, divided

Method
 

  1. Start by gathering all your ingredients on the counter. Rinse the parsley and chop the scallions, setting aside about 1/4 cup for garnish.
  2. In your food processor or blender, add the Greek yogurt, lemon juice, parsley leaves, garlic cloves, paprika, sea salt, and black pepper. Blend until the mixture is smooth and creamy.
  3. Once your base is ready, add in 1/2 cup of the chopped scallions. Pulse a few times until they are distributed evenly throughout the dip.
  4. Give your dip a taste! If you’d like more tang, add a splash more lemon juice. Adjust the seasoning with additional salt or pepper, if necessary.
  5. Transfer the dip to a serving bowl and sprinkle the reserved scallions on top for a pop of color and a fresh touch. Serve with an array of dippers like veggie sticks, crackers, or toasted pita.
