Heat olive oil in your skillet over medium-high heat. Add peeled and deveined shrimp, season with salt and pepper, and cook about 2 minutes per side until pink and opaque. Remove and set aside.
In the same skillet, add gnocchi and cook according to package instructions, about 3-4 minutes, until golden and slightly crispy.
Lower heat to medium and add minced garlic to skillet. Sauté for about 1 minute until fragrant. Add halved cherry tomatoes and fresh spinach. Cook until spinach wilts and tomatoes soften, about 3-4 minutes.
Pour in heavy cream and sprinkle Italian seasoning. Stir to combine. Add grated Parmesan cheese and stir continuously until cheese melts and sauce thickens, about 3 minutes. Season with salt and pepper to taste.
Return cooked shrimp to skillet and gently fold into creamy sauce with gnocchi. Heat through for 1-2 minutes. Garnish with fresh basil before serving.
