Ingredients

For the Chicken:
  • 8 pieces chicken legs (thigh and drumstick attached)
  • ½ cup olive oil
  • 4 cloves garlic (minced)
  • 1 tablespoon fresh rosemary (finely chopped)
  • 1 tablespoon fresh thyme (finely chopped)
  • 1 teaspoon smoked paprika
  • to taste Salt and pepper
  • 1 whole lemon (cut in wedges)
  • Fresh parsley chopped (for garnish)

Equipment

  • Large mixing bowl
  • Baking sheet
  • Meat thermometer
  • Whisk

Method

Cooking Steps:
  1. Step 1: Preheat the Oven - Begin by preheating your oven to 425°F (220°C). A hot oven is key to achieving that coveted crispy skin.
  2. Step 2: Prepare the Marinade - In a large mixing bowl, combine the olive oil, minced garlic, chopped rosemary, chopped thyme, smoked paprika, salt, and pepper. Use a whisk to mix the ingredients until well combined.
  3. Step 3: Marinate the Chicken Legs - Add the chicken legs to the bowl, ensuring they are well coated in the marinade. For best results, let the chicken marinate for at least 30 minutes at room temperature, or up to 2 hours in the refrigerator.
  4. Step 4: Arrange on Baking Sheet - Once marinated, arrange the chicken legs on a baking sheet, skin-side up. Be sure to leave some space between each leg to allow for even cooking.
  5. Step 5: Bake the Chicken Legs - Place the baking sheet in the preheated oven. Bake for about 35-45 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the skin is golden brown and crispy.
  6. Step 6: Add Lemon and Garnish - During the last 5 minutes of baking, you can add lemon wedges to the baking sheet for a touch of citrus flavor. Once done, remove from the oven and let the chicken rest for a few minutes. Garnish with freshly chopped parsley before serving.

Notes

  • Marinating is crucial for flavor and tenderness; longer is better.
  • For extra crispy skin, consider broiling for a minute or two at the end.
  • Cook extra and store in the refrigerator for up to 4 days for quick meals.
