Baking Instructions
- Step 1: Preheat your oven to 350°F (175°C) to ensure even baking.
- Step 2: In a large mixing bowl, cream together the softened butter, light brown sugar, and 1 cup of white granulated sugar until light and fluffy, about 2-3 minutes.
- Step 3: Add the eggs and vanilla extract, mixing until well combined.
- Step 4: In a separate bowl, whisk the flour, baking soda, baking powder, and salt. Gradually add to the wet mixture, mixing on low speed until just combined.
- Step 5: Add 1 cup of creamy peanut butter to the dough and mix until fully incorporated.
- Step 6: Scoop the dough onto prepared baking sheets, leaving space between cookies.
- Step 7: Bake for 10-12 minutes until edges are lightly golden and centers look slightly underbaked.
- Step 8: Cool on the baking sheet for 5 minutes, then transfer to a cooling rack to cool completely.
Notes
- Store cookies in an airtight container at room temperature for up to a week.
- For a lower-fat option, substitute half of the butter with unsweetened applesauce.
- Freeze cookie dough for up to 3 months; bake from frozen with extra baking time.
