Ingredients
  

For the Roast Chicken:
  • 1 whole chicken (3.5-6 pounds)
  • to taste Salt
  • to taste Pepper freshly cracked
  • 1 lemon cut into quarters
  • 6 cloves garlic peeled
  • 4 sprigs fresh rosemary
  • 1/4 cup butter (1/2 stick, melted)

Method
 

Cooking Instructions
  1. Step 1: Preheat your oven to 425°F (220°C) and let it preheat while you prepare the chicken.
  2. Step 2: Remove the chicken from its packaging and pat it dry with paper towels.
  3. Step 3: Sprinkle salt and pepper all over the chicken, both inside the cavity and on the skin.
  4. Step 4: Stuff the chicken with the lemon quarters, garlic cloves, and rosemary.
  5. Step 5: Melt the butter and use a brush to coat the entire surface of the chicken.
  6. Step 6: Place the chicken breast-side up in the roasting pan and roast for about 1 hour and 15 minutes.
  7. Step 7: Once cooked, remove the chicken and let it rest for at least 15 minutes before carving.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • Freeze the meat for up to 3 months for later meals.
  • To reheat, use a covered dish in the oven at 350°F (175°C).
