Ingredients
  

  • 1/2 pound beef chuck or stew meat
  • 1 bell pepper sliced
  • 1/2 large onion sliced
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice (about 1/2 lime)
  • Flour tortillas (soft taco size)
  • Your favorite fajita toppings (sour cream, avocado, salsa, etc.)

Method
 

  1. Start by slicing your bell pepper and onion into thin strips. These will add a lovely crunch and sweetness to your fajitas.
  2. In a bowl, combine the chili powder, ground cumin, salt, and pepper. Rub this spice mixture onto the beef chuck or stew meat to ensure every bite is flavorful.
  3. Place the seasoned beef at the bottom of the slow cooker. Top with the sliced bell peppers and onions. This layering helps the vegetables steam beautifully as the beef cooks.
  4. Drizzle the soy sauce and lime juice over the top of the ingredients in the slow cooker. This will enhance the flavors and tenderize the meat even further.
  5. Cover the slow cooker and set it to cook on low for 6-8 hours or on high for 3-4 hours. The longer it cooks, the more tender the beef will be!
  6. Once the cooking time is up, use two forks to shred the beef directly in the slow cooker. Stir everything together to combine the flavors.
  7. While the beef is shredding, warm your flour tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until they’re soft and pliable.
