Ingredients
  

  • 1 tablespoon olive oil For sautéing the chicken to golden perfection.
  • 4-5 pieces boneless, skinless chicken thighs cubed
  • 1 cup water Helps to create the sauce and keep the chicken moist.
  • 1 cup low-sodium soy sauce or tamari sauce The base of our teriyaki sauce.
  • 2 tablespoons honey Adds a natural sweetness.
  • 1 tablespoon pineapple juice (optional) For a tropical twist.
  • 1 cup packed light brown sugar Enhances the sweetness.
  • 1 teaspoon minced garlic A must-have for that aromatic touch.
  • 1 teaspoon ground ginger Adds warmth and depth.
  • 2 tablespoons cornstarch mixed with ½ cup cold water

Method
 

  1. Begin by cubing your chicken thighs into bite-sized pieces.
  2. In a large skillet or wok, heat the olive oil over medium-high heat. Add the cubed chicken thighs and sauté for about 5-7 minutes, until browned and cooked through.
  3. While the chicken is cooking, combine the water, low-sodium soy sauce, honey, pineapple juice (if using), brown sugar, garlic, and ginger in a medium bowl. Whisk until the sugar is dissolved.
  4. Once the chicken is cooked, pour the teriyaki sauce over the chicken in the skillet. Stir well to coat the chicken evenly.
  5. In a separate bowl, mix the cornstarch with cold water until smooth. Pour this mixture into the skillet and stir continuously for about 2-3 minutes until the sauce thickens and becomes glossy.
  6. Remove the skillet from the heat. Your Easy Teriyaki Chicken is now ready to be served!

Notes

  • Feel free to add vegetables like bell peppers or broccoli to the stir-fry.
  • If you like it spicy, add a dash of red pepper flakes to the sauce.
  • This recipe is easily doubled for larger families.
  • For extra flavor, marinate the chicken in teriyaki sauce for 30 minutes before cooking.
