Ingredients
  

  • 10 oz coleslaw mix or shredded cabbage
  • 1/2 cup carrots shredded
  • 1 onion thinly sliced
  • 16 oz ground turkey
  • 3 cloves garlic minced
  • 1 tbsp ginger root grated
  • 1/4 cup low sodium soy sauce
  • 1 tsp rice vinegar
  • 1 tsp toasted sesame oil
  • 1 tsp chili garlic sauce
  • 1 tbsp olive oil
  • 1 tsp sesame seeds (optional, for garnish)
  • 3 green onions green parts only, thinly sliced (optional, for garnish)

Equipment

  • Spatula or wooden spoon

  • Knife and cutting board

Method
 

  1. In a large skillet or wok, heat the olive oil over medium-high heat. Make sure the oil is hot before adding the ground turkey.
  2. Add the ground turkey to the skillet. Use a spatula to break it up into smaller pieces. Cook for about 5-7 minutes, or until the turkey is browned and cooked through.
  3. Once the turkey is cooked, add the minced garlic and grated ginger to the skillet. Stir well to combine and cook for an additional 1-2 minutes, until fragrant.
  4. Add the coleslaw mix, shredded carrots, and sliced onion to the skillet. Stir everything together and cook for about 5 minutes, or until the vegetables are tender but still crisp.
  5. In a small bowl, whisk together the low sodium soy sauce, rice vinegar, toasted sesame oil, and chili garlic sauce. Pour this mixture over the turkey and vegetable mix in the skillet. Stir well to ensure everything is evenly coated.
  6. Continue to cook for an additional 2-3 minutes, allowing the flavors to meld together. Taste and adjust seasoning if necessary.
  7. Remove from heat and serve hot. If desired, sprinkle sesame seeds and sliced green onions on top for garnish. Enjoy your Egg Roll In A Bowl warm, straight from the skillet!
